Waffles with Whipped Maple Syrup

Making whipped maple syrup is easy!  I followed the directions in Richard Blais’ book: Try This at Home: Recipes from My Head to Your Plate.   Just a few teaspoons of Versawhip, a soy-based protein, aerates regular maple syrup into the consistency of whipped cream.

I made gluten free almond flour waffles to go with the whipped maple syrup.  The waffles tasted great, but next time I’m going to try separating the eggs and whisking the egg whites into soft peaks before folding it into the rest of the ingredients for a fluffier textured waffle, so I changed the recipe a bit.

Ingredients for whipped maple syrup

Whipped Maple Syrup

  • 1 cup grade B maple syrup
  • 2 teaspoons Versawhip

Combine the maple syrup and Versawhip in a stand mixer fitted with a whisk attachment.  Mix on slow speed until dissolved, then increase speed to medium-high and whip until soft peaks hold.  The whipped syrup will hold at room temperature for about an hour.

Almond Flour Waffles

  • 1 cup almond flour
  • pinch of kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon Vietnamese cinnamon
  • 4 eggs, separated
  • 1/4 cup honey
  • 1 teaspoon Mexican vanilla
  • cooking spray

Preheat waffle iron.  Combine almond flour, salt, baking soda and cinnamon in a bowl.  In a separate bowl, whisk together egg yolks, honey and vanilla.  In another separate bowl, whisk egg whites to soft peaks.  Stir flour into egg mixture.  Gently fold egg whites into the waffle mixture until combined.

Spoon batter onto a hot waffle iron.  Be careful, they cook quickly:)

If you’re in a gluttonous gluten mood and you feel like calories don’t count, try Martha Stewart’s buttermilk waffles.  They are fluffy and buttery and just down right heavenly.

Thank you, Grandma Sherry!  I love my new dress.  I am going to have to limit the amount of figs I eat in order to still be able to wear it through the summer.  Sure I’m packed in, but I still think I look sizzling hot.
