Declicious Fig Ice Cream and Corn Cookie Sandwiches

These fig ice cream sandwiches are so damn good.  The Momofuko Milk Bar corn cookie’s delicate salty crunch and the creamy delicious Mission fig ice cream are a match made in heaven.  They’re tiny little gems, almost like an overstuffed macaron.   I couldn’t resist a big ball of ice cream in the middle.  It’s my new favorite way of serving ice cream.

Yummy Fig Ice Cream Sandwiches

I used the tiniest ice cream scoop that I could find to scoop out the cookie dough.  Then I baked them for 13 minutes instead of 15 minutes, let them come to room temperature and then popped them in the freezer.

I scooped a nice little ball of ice cream and put it on a cookie.  Then I topped it off with another cookie and squished it together ever so slightly.
